This is where it all started for us back in 1993. Naturally fermented, unpasteurised olives, slowly matured and preserved in 100% extra virgin olive oil, with nothing but a few herbs and spices for company. This is the traditional Mediterranean way—how olives have been prepared for generations across Greece, Italy, and beyond. We call it The Wisdom of the Ancients.
At the heart of our process is patience. Our inspiration comes from the places we’ve visited and the flavours we’ve discovered along the way. Each recipe is shaped by those experiences, drawing on the character of Mediterranean landscapes and the way people there bring simple ingredients to life. The result is olives with depth, warmth, and a sense of place—carrying stories in every bite rather than souvenirs on a shelf.
We continue to make our olives in small batches in the UK using the same principles: unpasteurised olives, extra virgin olive oil, and no artificial preservatives or shortcuts. The result is a product that reflects true Mediterranean food culture—clean, honest, and full of flavour. Whether enjoyed on their own, shared as part of a mezze, or paired with good bread and wine, they bring a genuine taste of tradition to every table.
