We've been using spices since we started marinating olives back in 1993. In that time, we've learnt a thing or two about the power of carefully blended spices. They can make a meal really sing.
The right combination of spice can create something truly delectable and, when used correctly, they are way, way more than the sum of their parts.
We've taken what we've learned over the years to create some really exceptional blends, inspired by some of the greatest dishes from the Mediterranean and beyond.
There is something about cooking over fire that offers a unique, rustic, and tasty experience, connecting us to our ancestors and creating a strong sense of community and shared enjoyment of food.
It's rare that we've got the weather in this country to enjoy it so makes it all the more special.
Spice and Smoke
Souvlaki
The Essence of Greek Grilling.
Meaning 'little skewer' in Greek. Cubes of (usually) pork or chicken are marinated & threaded onto skewers before being expertly grilled over charcoal.
Our Souvlaki Blend is as versatile as it is delicious. Equally at home with vegetables and fish as it is with meat. A drizzle of lemon oil and a sprinkle of Souvlaki blend and you have yourself the perfect marinade.
Adana Kofte
A spicy Turkish kebab of minced lamb grilled on skewers has roots in the Southern Turkish city of Adana and dates back potentially to the 12th century and nomadic grilling traditions.
Our Blend contains Aleppo Chilli, Sweet Red Pepper and Sumac amongst other delicious spices. Simply mix with minced lamb (or beef) and form into Kofte kebabs.
Also great for marinating vegetables, especially aubergines. Serve with some garlic yoghurt and big fat smile.
Shawarma
Originating in the Levant during the Ottoman Empire, Shawarma is traditionally made with many thin cuts of marinated meat threaded onto a large skewer.
Our Shawarma spice blend contains, a wide variety of aromatic spices, carefully blended by hand.
It can be used on any cut of meat to create a full flavoured marinade. Dust liberally, add a sprinkle of salt and a drizzle of good olive oil and lemon, happy grilling.

Flat Breads
When it comes to Kebabs, a good flatbread recipe is essential. You'll never want to eat a supermarket pitta again.
This is our go to recipe, which creates beautifully fluffy flatbreads.
- 500g Strong Bread flour
- 300g Water
- 50g Thick Greek Yoghurt
- 7g Dried Yeast
- 10g Salt
- Splash Of Extra Virgin Olive Oil
Measure out the water and dissolve the yeast. Add the dry ingredients to a bowl then pour in the water and add the yoghurt and oil. Mix lightly together (or use a mixer to knead) and then once combined, turn out onto a worksurface and knead until smooth and elastic.
Cover and leave to rise until doubled in size then divide into 8 equal parts, roll into balls and allow to rest for 10-15 minutes. Oil the work surface with a little olive oil. Roll out as thin as you can.
Preheat the oven and a large dry frying pan. One by one place a rolled out flat bread in the pan until bubbles start to form on the top, pop into the oven for a minute of two. You will see the bread balloon. Remove and place the pan back on the heat. Flip the bread and cook on the other side until lightly browned. Remove onto a cooling rack covered with a clean towel while you cook the rest. These bread freeze very well and can be heated back up in a couple of minutes in a warm oven.
