Made for us in Italy, Pesto alla Calabrese combines red peppers and sun dried tomatoes with creamy ricotta, Pecorino, basil, oregano and a gentle touch of chilli. Extra Virgin Olive Oil brings richness, while the peppers lend a natural sweetness that keeps everything rounded and generous.

Stir it through hot pasta or gnocchi with a spoonful of cooking water. Spread it over warm focaccia or crostini, spoon it alongside grilled chicken or fish, or use it to bring depth to roasted vegetables and soups.

It is full flavoured without being fiery and useful whenever supper needs to appear with very little ceremony.
