This is where it all started for us back in 1993. Naturally fermented, unpasteurised olives, slowly matured and preserved in 100% Extra Virgin Olive Oil, with nothing but a few herbs and spices for company. This is the traditional Mediterranean way—how olives have been prepared for generations across Greece, Italy, and beyond. We call it The Wisdom of the Ancients.
