Ingredients

  • 1 cooked chicken breast
  • 2 tbsp OEA Lemon & Dill Dressing
  • 1 generous spoonful OEA Thyme & Shallot Bella Olives, sliced
  • 2–3 OEA Cornichons, sliced
  • 1 tbsp mayonnaise
  • A handful of fresh leaves
  • Fresh dill and mint, roughly picked
  • 1 fresh baguette or sourdough sandwich roll
  • Butter, for spreading

Method

  1. Prepare the filling
    Slice the cooked chicken breast, olives and cornichons.

  2. Mix the dressing
    Add the chicken, olives and cornichons to a mixing bowl. Dress with the OEA Lemon & Dill Dressing and mayonnaise, tossing gently so everything is well coated.

  3. Prepare the bread
    Slice your baguette or sourdough roll and spread generously with butter.

  4. Build the sandwich
    Pile the dressed chicken mixture onto the bread.

  5. Finish with freshness
    Add a handful of crisp leaves and scatter over freshly picked dill and mint.
