Sweet little onions with a lively chilli kick.

Borettane onions are naturally sweet, which makes them particularly good for pickling. Here they meet white wine vinegar, chilli and mustard seed, giving you plenty of crunch, a clean sharpness and a warmth that builds gently.

Put them beside strong cheddar, pork pie, salami or cold roast meats. Tuck them into a roast beef sandwich, halve them over a cheese toastie or serve them with sausages, burgers and grilled meats.

The liquor is worth keeping too. A spoonful will sharpen mayonnaise, potato salad or a dressing for lentils and roast vegetables.
