Dark, aromatic Kalamata olives, now conveniently pitted.
We first came across this recipe in the small Syrian town of Maskanah, east of Aleppo. Cumin, coriander and cardamom bring warmth and fragrance to the rich fruitiness of the olives.
With the stones removed, they are easy to spoon into salads, scatter over warm flatbreads or serve generously alongside crumbly cheeses and slow roasted meat.
