Sweet, sharp and delicately peppery.
Small Borettane onions are naturally sweet and particularly good for pickling. Fragrant pink peppercorns give them a gentle warmth and a soft floral note rather than the fiercer heat of black pepper.
Serve them with goat’s cheese, pâté, salami or a thick slice of ham. Halve them over cheese on toast, chop them into a potato salad or put the open jar on the table with cold meats and good bread.
The pickling liquor is useful too. Whisk a spoonful into Extra Virgin Olive Oil for a sharp dressing, or use it to brighten mayonnaise and creamy sauces.
