These plump pitted olives take their cue from pistou, the fragrant basil and garlic sauce of Provence. Fresh tasting and savoury, with enough garlic to give them depth and plenty of basil to keep things lively.
With the stones removed, they are particularly easy to serve. Spoon them alongside soft cheeses and good bread, tumble them through warm new potatoes or place a generous bowl at the centre of a grazing table.
