Spaghetti Mezzanotte Chilli and Tomato Pesto

A little midnight restoration.

Mezzanotte means midnight, and this is the sort of thing you might whip up after a large night out, when only something hot, tasty and restorative will do. A spoonful stirred through steaming spaghetti, a little pasta water and perhaps some grated Parmesan is often all that is needed.

Made for us in Liguria with sun dried tomatoes, red chilli, garlic, paprika, oregano and olive oil, it is rich, warming and deeply savoury. The chilli brings a proper glow without obscuring the sweetness of the tomatoes.

Stir it through hot spaghetti or linguine with a splash of the cooking water. Spread it over warm bruschetta, spoon it into soups and stews, or use it to bring depth to roasted vegetables.

It also makes an excellent crisp topping in our Mezzanotte Salmon with Braised Fennel and Olives.
