This Ultimate Cheese Toasty takes a comfort food classic and gives it a bold, flavour-packed twist. Layers of rich cheddar and mozzarella melt into tangy garlic and dill sauerkraut, all brought together with a hit of OEA Chipotle Raw & Hot Sauce.

Fried in olive oil until golden and crisp, then pressed for that perfect crunch, this is a toastie that delivers on every level — gooey, crispy, smoky and sharp all at once.

Ultimate Cheese Toasty Recipe

Ingredients (Per Toastie)

  • 2 thick slices sourdough (or bread of your choice)
  • A generous amount of sauerkraut (we used Bath Culture House dill sauerkraut)
  • Cheddar & mozzarella, grated
  • OEA Chipotle Raw & Hot Sauce
  • Olive oil, for frying

To Serve

  • OEA Cornichons

Method

Golden grilled cheese sandwich with sauerkraut and melted cheese served with cornichons.
  1. Heat a drizzle of olive oil in a frying pan over low / medium heat.
  2. Layer one slice of bread with a generous amount of grated cheddar and mozzarella, followed by the sauerkraut and a drizzle of OEA Chipotle Raw & Hot Sauce. Top with more cheese, then place the second slice of bread on top.
  3. Place the sandwich into the pan and press it down firmly (we use an antique iron but any weight like a clean heavy pan or similar to get that crisp finish).
  4. Cook for a few minutes until golden and crisp, then carefully flip and cook the other side until the cheese is fully melted and the bread is deeply golden.

To Serve

Serve hot, straight from the pan, with a side of OEA Cornichons for a sharp, crunchy contrast.

Perfect for quick lunches, indulgent snacks or comfort food moments.
