Format

Whole Kalamata olives in Extra Virgin Olive Oil with cumin, coriander and cardamom.

Naturally fermented Kalamata olives, left to marinate in Extra Virgin Olive Oil with earthy cumin, fragrant coriander and the gentle warmth of cardamom. Dark, rich and deeply aromatic.

We came across the original recipe in Maskanah, a small Syrian town east of Aleppo. Its warm spices and full flavour have stayed with us ever since.

Serve them with slow cooked lamb, roasted aubergines or a generous mezze. They are also very good alongside a full bodied red wine. Once the olives are gone, use the spiced Extra Virgin Olive Oil for marinades, roasting or warm bread.
