Adana Spiced Sausage Rolls
Boxing Day may not have the glitz and grandeur of Christmas Day’s big roast, but it carries its own kind of magic — slower mornings, relaxed grazing, and flavours that feel just as celebratory without any of the stress. It’s the day when the fridge is full, the house is cosy, and everyone is happily helping themselves to “just a little something.”

And if you ask us, there’s no better way to elevate the Boxing Day spread than with sausage rolls that are spiced, sticky, and utterly irresistible. Imagine flaky pastry crisping in the oven, the warm aroma of Adana spices filling the kitchen, and that glossy layer of sweet-savoury Sticky Onion Marmalade melting into every bite.
At Olives Et Al, we’re all about bold flavours that bring people together — even (and especially) on the most laid-back day of the year. Our Adana Spice Blend packs smoky warmth with a gentle kick, transforming simple sausage meat into something extraordinary. Paired with our Sticky Onion Marmalade and a crunch of dukkah on top, these sausage rolls are everything Boxing Day should taste like: comforting, moreish, and impossible to resist.
Whether you’re feeding family between long walks and leftover sandwiches, stacking a grazing board, or enjoying a quiet moment with a warm roll and a glass of something sparkly, this recipe is guaranteed to become a new festive tradition. Golden pastry, spiced filling, caramelised onions — it all comes together in a way that feels both indulgent and effortless.

Ingredients
-
1 sheet ready-rolled puff pastry
-
400g sausage meat
-
1–2 tbsp Olives Et Al Adana Spice Blend
-
2–3 tbsp Olives Et Al Sticky Onion Marmalade
-
1 egg, beaten
-
Dukkah, for sprinkling
Method

Prep the filling:
In a mixing bowl, combine the sausage meat with the Adana Spice Blend until evenly mixed. This is where the warmth and depth of flavour truly begin.
Layer on the flavour:
Unroll the puff pastry and spread a generous layer of Sticky Onion Marmalade across the surface. Take in that aroma — it’s Boxing Day comfort in a jar.
Roll it up:
Shape the spiced sausage meat into a long, even line along one edge of the pastry. Roll it tightly to encase the filling, seam side down. Slice into bite size rolls.
Glaze and sprinkle:
Brush the pastry with beaten egg for that irresistible golden shine, then finish with a sprinkle of dukkah for crunch and aromatic lift.
Bake to perfection:
Place on a lined baking tray and bake at 180°C for 30 minutes, or until the pastry is puffed, deep golden, and cooked through.
Tips & Variations
Turn up the warmth: Add a teaspoon of Harissa for a deeper kick.
Make ahead: Assemble the rolls a day early, keep in the fridge, and bake fresh on Boxing Day morning, or freeze and bake from frozen.
Perfect with sides: Serve with extra Sticky Onion Marmalade, a crisp winter salad, or alongside leftover roast potatoes for the ultimate Boxing Day feast.
💡 Pro tip: Chill the rolled pastry for 15 minutes before slicing — it keeps the sausage rolls neat, tidy, and extra flaky.
Boxing Day feasting has never looked — or tasted — better.
