Spiced Aubergine with Adana Spice (Imam Biyaldi)

Spiced Aubergines with Adana Spices*, Extra Virgin Olive Oil* and Chilli Oil*
Another Potting Shed favourite for you to make at home. Nice.
Ingredients (serves 4)

4 Aubergines cut into happy chunks
1 Onion, peeled, thinly sliced
2 Large garlic cloves, sliced thinly
1 Tsp cumin, coriander & cinnamon
1 Tbsp Olives Et Al Adana Spice
A proper glug of Olives Et Al Ex Virgin Olive Oil
2 Tins Tomatoes
Fresh Mint, Coriander & Parsley, roughly chopped
A glug of Olives Et Al Chilli Oil
Method
Heat oven to 190. Cut Aubergines into chunks and lightly salt. Set aside.
Slice onions and begin to cook slowly in olive oil, add garlic after 10 mins.
Drizzle Aubergines with Extra Virgin Olive Oil and toss with the Adana Spices, roast for 15 mins until golden and nearly soft.
Meanwhile, add the spices to the onions and cook for 5 mins, add the chopped coriander and the tomatoes. Add the roasted Aubergines and cook for 20 mins
Add a good tablespoon of fresh mint, coriander, and parsley. Season.
Finish with some more Adana Spices and Olives Et Al Chilli Oil.
Serve immediately with flat breads & hummus
