This Mixed Beans & Feta Salad is the ultimate no-cook dish — fresh, vibrant and full of bold Mediterranean flavour.
Creamy beans are combined with salty feta, punchy cornichons, briny Kalamata olives and capers, then lifted with our bright OEA Lemon & Dill Dressing and a final drizzle of Lemon Olive Oil.

Mixed Beans & Feta Salad Recipe
Ingredients
- 2 tins of mixed beans (we used butter beans and black-eyed beans), drained
- 100g feta, crumbled
- A handful of OEA Cornichons, chopped
- A handful of OEA Kalamata Olives, chopped
- 1 tsp OEA Lilliput Capers
- ½ red onion, finely chopped
- OEA Lemon & Dill Dressing
- Fresh dill and parsley, chopped
- OEA Lemon Olive Oil, to finish
Method

- Drain and rinse the beans, then add to a large mixing bowl.
- Add the crumbled feta, chopped cornichons, Kalamata olives and capers.
- Stir through the finely chopped red onion along with plenty of fresh dill and parsley.
- Drizzle generously with OEA Lemon & Dill Dressing and toss gently to combine.
- Finish with a drizzle of OEA Lemon Olive Oil and a final scatter of herbs before serving.
To Serve
Pile the salad onto a serving platter and finish with an extra drizzle of dressing and olive oil.
