Greek Salad with Chickpeas
When the weather is fine, it's hard to beat a simple Greek salad. Crisp, refreshing, and full of Mediterranean charm. This version includes chickpeas for a little extra protein and crunch. Perfect as a light lunch or a vibrant side dish, this salad captures the essence of Greece in every forkful.
Ingredients:

Salad
- Tin of Chickpeas
- Tomatoes
- Red Onion
- Cucumber
- Feta Cheese
- Parley
- OEA Kalamata Olives
Dressing

- 1 tsp Dijon Mustard
- Juice of 1 Orange
- 25 ml Red Wine Vinegar
- 2 tsp OEA Souvlaki Blend
- 75ml OEA Lemon Olive Oil
We've purposely left out quantities from the salad ingredients as it really depends on your mood and preferences. Feel free to omit what you don't like and add more of what you do. Chop all of the salad ingredients into regular sized chunks. Whisk the salad dressing together. Toss it all together. Simple as you like.
