Salmon, Potato & Asparagus Salad

This vibrant salmon salad is a perfect balance of fresh, rich and zesty flavours. Flaked salmon is combined with tender new potatoes, crisp asparagus and creamy avocado, then lifted with plenty of herbs, olives and our bright OEA Lemon & Dill Dressing.
The addition of Taverna Mixed Pitted Olives and Lilliput Capers brings briny depth that pairs beautifully with the richness of the salmon, while fresh dill ties everything together with its unmistakably Mediterranean aroma.

Ingredients

- Cooked or hot smoked salmon
- Steamed or boiled new potatoes
- Spring onions, finely sliced
- Blanched asparagus
- Avocado, sliced
- OEA Taverna Mixed Pitted Olives
- OEA Lilliput Capers
- OEA Lemon & Dill Dressing
- Extra fresh dill
- Salad leaves to serve
Method
Start by boiling or steaming the new potatoes until tender, then allow them to cool slightly before slicing into bite-sized pieces.
Blanch the asparagus briefly in boiling water until just tender, then refresh in cold water to keep its bright colour.
In a large bowl, combine the potatoes with sliced spring onions, asparagus and avocado.
Flake the cooked or hot smoked salmon into large pieces and add to the bowl along with the OEA Taverna Mixed Pitted Olives and Lilliput Capers.
Drizzle generously with OEA Lemon & Dill Dressing and scatter over fresh dill. Toss gently so everything is lightly coated while keeping the salmon in generous flakes.
To Serve
Pile the salmon salad onto a bed of fresh salad leaves and finish with extra herbs and another drizzle of lemon & dill dressing or Extra Virgin Olive Oil.
