This Mediterranean-inspired roast brings together juicy chicken thighs, parboiled new potatoes that crisp at the edges, sweet peppers, red onion, briny olives and a punchy souvlaki spice. A few wedges of preserved lemon add zing, and the olive oil straight from a jar of OEA Taverna Pitted Olives keeps every ingredient beautifully glossy and rich with flavour.

Ingredients

Roast Chicken souvlaki tray bake
  • 1 red onion, cut into wedges
  • 1 red pepper, roughly chopped
  • Extra virgin olive oil from a jar of OEA Taverna Pitted Olives, plus the olives sliced
  • 6–8 chicken thighs
  • Plenty of OEA Souvlaki Rub
  • Parboiled new potatoes
  • A few wedges of preserved lemons

How to Make It

  1. Preheat the oven to 200°C / 180°C fan / 400°F.
  2. Prepare the veg: Add the red onion, red pepper and parboiled new potatoes to a large roasting tray.
  3. Drizzle with olive oil: Pour over the EVOO from a jar of OEA Taverna Pitted Olives, then toss everything to coat.
  4. Add the chicken: Nestle the chicken thighs into the tray andSouvlaki Chicken with green salad sprinkle generously with OEA Souvlaki Rub.
  5. Add olives & preserved lemon: Scatter the sliced olives and preserved lemon wedges over the top.
  6. Roast: Bake in the preheated oven for about 45 minutes, or until the chicken is golden and cooked through, the potatoes are crisp at the edges and everything has a little char.
  7. Serve: Pull straight from the oven and serve family-style, spooning up the juicy pan juices with crusty bread if you like.
