This is where it all started for us back in 1993. Naturally fermented, unpasteurised olives. This is the traditional Mediterranean way—how olives have been prepared for generations across Greece, Italy, and beyond. We call it The Wisdom of the Ancients.
Along the way we have added some stuffed olives and a few in infused brine, all the while keeping our simple is best ethos.
We continue to make our olives in small batches in the UK using the same principles. Whether enjoyed on their own, shared as part of a mezze, or paired with good bread and wine, they bring a genuine taste of tradition to every table.
